How can I indicate that a receipt should be printed to the business?

If a record has a home address and a business address and the home is selected as the default, is there a way to indicate - by a payment - that receipt should be generated to the business?

Sure. Select the Business Address in the Address Column. If you just added this address to the account choose Refresh Account on top of screen to get the new address in the dropdown.
