To have excel split the data by a specific field, select the split by field before clicking on the export menu. This will create a separate sheet for each value in that field.
You can also split an existing excel sheet that you already have. To do this make sure the sheet you want to split is called Sheet1. Then select the option "Split Excel File in to Sheets".
